1) what are your brewing suggestions?

There are several ways of brewing Olive Leaves.

As they don’t contain any caffeine or tannin, the same leaves can brew multiple time throughout the day.

There is not really a minimum brewing time for it, and you could use something similar to the Chinese or Taiwanese Oolong small pot brewing (or Gong Fu style), or a Gaiwan for multiple extractions. Like this you can enjoy the way the leaves develop in flavour brewing after brewing and, it will help those who like their tea hot at anytime.

Thicker leaves, like “FRONN” and “SCERMT”, could take easily boiling water.

However…with “PONTARELL” , I would suggest 85 °C, as the sprouts are way more delicate.

I personally like, especially in Summer, to brew any of the above, in a teapot overnight at 85 °C, and drink it at room temperature in the morning while I have my breakfast or while I’m working out.

If you wish to brew more then a teapot…a stove pot maybe (as soon as the water starts boiling: heat off…leaves in…lid on) you could strain it and store any leftover in a bottle, and keep in the fridge (bring to room temperature first if still hot), ready to be enjoyed with a couple of ice cubes and a slice of lemon anytime you wish during the day.


2) how else can one use the infusion?

Good question!

If you have any left over liquor or you decide to brew it over night to enjoy it darker and stronger in the morning, feel free to bottle some in a vaporiser, and spray it over your body after a shower or during a sunny day in your garden...let it dry over your hair and face, etc., and surround yourself with a beautiful fragrance of olive wood…

It has 40 times more polyphenols than olive oil and it doesn’t stain!


3) IS IT TRUE THAT WHITE TEA IS HEALTHIER THAN GREEN TEa?

Yes it’s true!

The making of white tea involves just three steps: picking, withering, and air drying.

It’s considered “unprocessed", and since no firing or steaming process are involved (as with the green teas), it is only slightly oxidised, about 5-10%. The name is derived from the fine white hairs on the tea buds.   

​Many Nutrition experts like Lisa Guy confirm that WHITE TEAS ARE THE HEALTHIEST among all other teas.

She says: “They are treated gently and not overly processed, and so, they retain most of their beneficial antioxidants. Green tea is considered rich in antioxidants. However since white tea is less processed, it retains a higher amount of antioxidants, compared to green.
White tea contains the same types of antioxidants as green tea, but in greater quantity."
